Nowadays, with over 453,000 hectares of olive orchards and more than 57 million olive trees, Syria is the world's fourth biggest producer of olive oil and fifth producer of table olives. In 1995 Syria had more than 414,000 hectares containing 60 million olive trees. These trees produced 450,000 tons of olives and  100,000 tons of olive oil.

    What does eXtra virgin olive oil means?
    oils that have an excellent flavor, aroma and a maximum acidity, in terms of oleic acid, of 1 gram per 100 grams. They are the oils with 
    the highest quality from the organoleptic point of view.

    • Did you know that the normal life span of an olive tree is 500 to 900 years;  there are even trees alive in the Mediterranean that are over 1000 years old. In my home town there are tress that over 1500 years old.

      FAQ Questions:

    • Question: Why different oils have different colors?

    Answer: The color of the oil will not predict the taste of the oil.   Greener oils are usually pressed from greener olives earlier in the season.  Some varieties have a greener or more golden oil than others, but oils are often blended from several varieties.

    • Question: How should you store olive oil?

    Answer: Olive oil does not age.  A peppery oil will sometimes mellow a bit over a few months but olive oil often goes bad under the best storage conditions in a few years.  Light and heat are its enemies.  Storage in a dark cool cupboard or in dark glass or tin is preferable.  Keep only a
    small amount next to the range where you need it for cooking as the heat from cooking degrades it.   Storage in a refrigerator is fine but the oil will turn almost solid so you must warm it before using.

    • Question: Bulk oil is sold by the metric ton - how much oil is that?

    Answer: A metric ton is 1000 Kilograms, .98421 long tons, 1 tone or 1.1023 short tons. The specific gravity of most vegetable oils is .9 so 1000
    kilograms is about 1100 liters

    • Question: Does olive oil contain cholesterol?

    Answer: No. Olive oil, like all vegetable oils, is cholesterol free, free, free.

    • Question: Why does olive oil seem to be higher in cost than some of the other products available?

    Answer: It may seem more expensive than most cooking oils, but, because it is so flavorful, healthy taste, a little goes a long way. You don't need to use much olive oil to get all of its many delicious benefits.

    • Question: What is cold pressed olive oil?

    Answer: Because olive oil is obtained from the fruit using only pressure - with no heat or solvents - the process is known as "cold pressing." Most vegetable oils, such as corn and soybean, are processed using heat and solvents.

    • Question: Why is my olive oil cloudy. Is it all right to use?

    Answer: If you keep olive oil in the refrigerator, it will become cloudy. This does not affect the flavor or quality. If you prefer, simply restore the oil's clarity by bringing it to room temperature before using. And that will bring it back to its original color.
